Potato & Leek Soup (Guest Recipe)
If there is a bigger fan of Chocolate after me in our family it is Flovie Martins. But, the calories in the chocolate settle very differently on me compared to her.

Leeks are a part of onion family. They are much larger compared to green onions (scallions) They improve digestion and promote weight loss. Leeks are also great in fighting infections.
So let’s take a quick look at this super easy recipe.
Potato & Leek Soup
Ingredients :
- 2 Leeks
- 2 Potatoes (medium-sized)
- 2 tbsp butter
- 1 tsp chopped garlic
- A pinch Black pepper
- ½ tsp Red chilli powder
- 1 cup vegetable stock
- Salt to taste
- Chopped coriander for garnish
- 1 tbsp cream
- 1 tbsp grated cheese cheddar or parmesan
- Crushed pepper for garnish
- A few slices of leeks chopped (garnish)
Method :
- Wash the leeks thoroughly and chop them.
- In a saucepan, melt the butter and add the finely chopped garlic
- Then add the chopped leek and saute.
- Add pepper and red chilli powder as per taste.
- Chop potatoes into small pieces and add to the mix.
- Now to this add the vegetable stock and bring to a boil
- Add some chopped coriander leaves
- Cover and cook till done. Let cool and then blend to smooth paste.
- Return to gas and add cream and grated cheese. (Do not boil)
- Check for salt and season as per taste.
- Garnish with some more finely chopped coriander leaves, slices leeks and crushed pepper.
- Serve hot.
