Iceberg Lettuce & Pineapple Salad (Olive oil dressing)

When winter is approaching the markets are so full of fresh produce. I personally love the sight of greens, reds and orange hues at the greengrocer.

There is a lot of fun you can have with salads.  It need not be BORING (contrary to popular belief)

I love the crunch that Iceberg lettuce brings to a bowl of salad.  Usually, veggies with a lot of water content are good for salads, they make you feel less guilty even if you have more than your portion size.  Also, lettuce looks a lot better in a salad bowl, it beautifully compliments the other brightly coloured vegetables.

So what are we waiting for, let’s put together this amazing bowl of freshness, that won’t take more than 10 minutes !

Iceberg Lettuce & Pineapple Salad (Olive oil dressing)

Ingredients :

  • 1/2 iceberg lettuce, torn in big pieces
  • 2 cucumbers, thinly sliced
  • 1 medium onion, sliced
  • 2 medium tomatoes, cut into cubes
  • 1 /2 cup diced pineapple
  • Few pomegranate seeds

For Salad dressing :

  • 3 tablespoons lemon juice
  • 3 tablespoons extra virgin olive oil
  • 1 tbsp honey
  • 1 tsp piri piri sauce
  • salt to taste

Method :

  • In a big salad bowl, mix all the vegetables together.
  • For the dressing: Blend all the ingredients in a small bowl. Pour the dressing over the vegetables and toss gently until salad is well coated.
  • Throw in the pomegranate seeds.
  • Serve cold.
