Makhanas also known as fox nuts, lotus seeds, or phool makhana. They are widely available and can easily be incorporated into our daily diet.
Phool Makhanas are popped lotus seeds. It’s cultivation originated in Madhubani a town in the Indian state of Bihar. It is a laborious job to harvest and process the makhanas. But because of the growing popularity it is now a great source of income for the farmers. Makhanas are also popular option during fasting in India.
You can make Makhana Chaat, Makhana laddoos, Makhana kheer and so many more dishes.
They are a great snacking option. Makhanas are excellent for diabetics and heart patients because of their high content of magnesium and potassium. They are packed with antioxidants and micronutrients as well. Makhanas also have a high satiety content which keeps us full for a longer time, which in turn helps keep those cravings away and speeds up weight loss.
CARAMEL MAKHANA (with Jaggery)
Calories per 100 g : 380 calories
Ingredients :
- 2 cups Makhana
- 2 tsp desi ghee
- ½ cup organic jaggery (Gur)
- 1 tbsp water
Method :
- Heat a thick-bottomed pan, roast the makhanas on low flame till crispy for 10 – 12 minutes. Keep aside.
- In another pan add the desi ghee, organic jaggery and the water.
- Melt & caramalise the jaggery on a low flame, till it turns a little dark shade of brown. (Be careful not to burn the jaggery).
- Then put the makhana in a pan and and ensure the melted jaggery coats all the makhanas evenly.
- Take it out in a big bowl and once they are cool enough to handle, separate the makhanas and serve.
Handy Tips :
- You can check if the makhanas are roasted well by crushing one makhana in between your fingers. It should break with a crunchy sound, which ensures they are roasted well.
- Instead of jaggery you can use desi khand or brown sugar as well.
- Desi ghee can be replaced with coconut oil for a vegan option .
