Sabudana or sago is a commonly used ingredient during fasting days to prepare various snacks.  The Indian households are quite familiar with this tapioca pearl.

This is Navratri season in India.  It is a nine-day fasting period for the Hindus.

There is a wide range of snacks you can make from sabudana (sago).
For instance : 
Sabudana Kheer (porridge)
Sabudana Vada
Sabudana Khichdi

Sabudana or Sago is a good source of Potassium and is rich in Calcium too. 

 

Sabudana Pyramid is a snack made from sabudana, peanuts, chillies and amaranth flour. Perfect for fasting days.

 

It has simple carbohydrates that break down easily, hence the digestion process is simple.  It is gluten-free and so that becomes an added advantage to those who are gluten intolerant.

 

A simple reason why sabudana is used in fasting recipes is that it provdies instant energy.

Here, I have shown a version of sabudana vada with a little HEALTHY TWIST  to it, do make sure you read the HEALTHY TIPS at the end of this page.

So if you want to know why the shape of pyramid in this recipe ?
The simple reason is that if the shape is flat, it will cook easily. Even if you plan to either shallow-fry or bake them the time taken will be lesser as compared to traditional round vadas.  Also it looks great!

 

RAJGIRA & SABUDANA PYRAMIDS


In
gredients :

  • 2 medium potatoes boiled
  • 1 cup sabudana (sago)
  • 2 tbsp roasted peanuts (coarsely ground)
  • 2 green chillies finely chopped
  • 1 tbsp fresh coriander leaves
  • 1 tsp roasted jeera powder
  • Rock salt to taste
  • 2 tbsp Amaranth flour / (Rajgira atta) (or any flour which can be used for fasting)
  • 2tbsp water (or as required)

Method :

  • Grind the sabudana into fine powder in a mixie.
  • Grate the boiled potatoes.
  • In a bowl combine the powdered sabudana, boiled potatoes, 2 tbsp rajgira atta (amaranth flour) jeera powder, chillies, peanuts, rock salt.   Mix well with very little water till it forms a dough.
  • Leave for around 15 minutes for the sabudana to soak the moisture.
  • Then shape into pyramids.
  • Coat the pyramids with amaranth flour.
  • Deep fry till golden brown.
  • Serve with sweetened curd.

  5. If you were to go by the recipe and deep fry them, then we recommend to use cold-pressed oils instead of refined oils. COLD-PRESSED oils are an healthier alternative to deep frying.
