Aloo Palak Tikki
Spinach needs no introduction to the health club. It is loaded with nutrients. I try to incorporate it in my recipes. Either in the form of rotis, soups, raita or cutlets.
This particular recipe is for those who are pressed for time. You can always make the mix and keep refrigerated. When you need to make the tikkis simple add freshly chopped spinach and salt.
It is shallow-fried. So, no oily mess in the kitchen.
You can increase the veggies as per your choice, it is completely optional. You can add cheese if you want it a little creamy. You can play with this recipe as you fancy. So we are cool.

Ingredients :
- Potatoes – 3 medium sized
- Spinach 1 bunch
- Coriander leaves ½ cup
- Peas ½ cup
- Carrot ½ cup
- Cauliflower ½ cup
- Green chilli paste 2 tsp
- Garlic chilli paste 2 tsp
- Coriander powder 1 tsp
- Cumin powder 1 tsp
- Amchur powder ½ tsp
- Salt to taste
- Kasoori methi 1 tsp
- Corn flour half bowl (2 tbsp)
- Bread crumb as required
Method :
- Boil the potato, remove the skin and mash them.
- Make a paste of green chilli and garlic together.
- Cut the cauliflower, carrot in small pieces and steam along with peas.
- Mash the cut veggies and peas.
- Chop the spinach fine.
- Now, mix together the mashed potatoes, mashed veggies, chopped spinach, chopped coriander, kasuri methi, corn flour, salt, amchur powder and all the spices.
- Mix well and keep aside for some time.
- Make a small kabab of this mixture in a round shape or whatever shape you like.
- You can either shallow fry or deep fry the kebabs. I shallow fried them.
- Serve hot with sweet chutney or tomato ketchup.
Handy tips :
- You can add methi (fenugreek leaves) or other veggies of your choice.
- If the mixture turns too wet, you can add breadcrumbs.
- Deep frying the kebabs makes them crispier than shallow frying.
- If you want to add to the nutritional value of the recipe try adding oats instead of breadcrumbs.
- Sprinkle chat masala and lemon on top of the kebabs if you like the tangy flavour.
