Alphonso Mango Fox Nuts Makhana Kheer

Alphonso Mango and Fox Nuts Porridge is a healthy blend of seasonal fruit and magnesium-packed foxnuts, also known as makhana in India.  This is a twist on the much-loved Indian dessert – the kheer (porridge).  It is usually made from either rice or semolina, but in this recipe, we have used makhana.

The season of mangoes is a treat for HEALTHY dessert lovers. The sweetness that sugar brings to any dessert can be replaced by just adding a good quantity of juicy pulp of naturally ripened Alphonso mangoes.  Exactly like this recipe. Here too we have not used any sugar.

However, you can serve this delectable dessert with a drizzle of maple syrup or honey if you prefer your desserts a bit on the sweeter side.

Alphonso Mango and Makhana Kheer

Ingredients :
  • 2 cups ripe Alphonso Mango puree ( freshly made)
  • 1 cup fox nuts
  • 1tsp clarified butter/ghee
  • 2 tbsp Cashewnuts
  • 3 cups milk of choice
  • 1 tbsp milk powder (optional)
  • A few cardamoms
Method :

1. In a hot pan melt the ghee & toast the Cashewnuts till light brown.  Remove & keep aside.
2. In the same pan roast the fox nuts on medium heat till they turn crisp. Remove & keep aside
3. Once fox nuts are cooled pulse grind the fox nuts, Cashewnuts & cardamom to a coarse powder.
4. Now add 3 cups of milk in the pan & bring to boil.
4. Add milk powder & keep stirring. Boil for around 10 minutes stirring continuously.
5. To this milk add the freshly made mango puree & cook on low heat for 5 minutes.
6. The milk will turn slightly thick.
7. To this milk add the fox nuts, cashewnuts powder & mix well.
8. Cook for 7 to 10 minutes. Now the porridge will turn thick & creamy.
9. Adjust the consistency to your liking by adding more milk (if you don’t like the porridge too thick)
10. Now remove the kheer from pan & cool to room temperature. Later refrigerate it & serve chilled.

You must give this recipe a try – It is one of the healthiest desserts you can make this summer. The Mango and Makhana Kheer is best served chilled.
