Bok Choy and Mushroom Soup

Steaming bok chouy with light seasoning of soy sauce, finely chopped ginger and garlic is a great way of having it as a healthy side dish. Bok Chouy is usually used for stir-fry and soups. If you are looking for a quick fix and scrumptious dinner option then it is a good idea to have Bok Chouy handy.
It doesn’t require too much time to cook and hence serves as a great option for quick dishes when there is a time crunch.

The dirt usually collects at the bottom in the crevices of the stalks, so cutting the ends off, helps make them more accessible to clean.
Bok Choy and Mushroom Soup
Ingredients :
- 1 medium onion, diced
- 1 tomato diced
- ½ cup diced mushrooms,
- 1 tbsp olive oil
- 2 medium bok chouy, cleaned and chopped
- 1 tsp ginger & garlic finely chopped
- ½ tsp crushed pepper
- ½ mixed dry herbs (oregano / thyme / basil )
- 1 tbsp low sodium soy sauce
- 1 tbsp green chilli chinese sauce
- A dash of tabasco sauce (if you want it spicy a few drops will make all the difference )
- Salt to taste
Method :
- Heat the saucepan add the olive oil then add the diced onion.
- Add chopped ginger garlic saute well then add tomatoes saute for 2-3 minutes.
- Add 4 cups water and bring to a boil, add the soy sauce, crushed pepper, salt & the green chilli sauce.
- Once soup begins to boil, reduce heat to low add the diced mushrooms & simmer for 5 mins. Then cut 1/2″ to 1″ off the end of each bok chouy plant and rinse them thoroughly.  Then slice the leaves into bite-sized pieces and add to the soup pan. Simmer for another 2 mins
- Garnish mixed herbs, a dash of tabasco and add chopped green onion (if desired.)
- Serve hot.

Handy Tips :
1. Bok Chouy is a delicate vegetable and hence any overcooking will destroy the nutrients in it. So keep the cooking time to the bare minimum.
2. Make only the necessary amount of bok chouy that your family needs, because storing it in the fridge may not taste too appetizing and also there will be a loss in the nutritional content of the dish when you reheat it.
3. You can combine this soup with a garlic bread or soup sticks makes an excellent combination.
