Chocolate Sandwich Cookies

This is a chocolate cookie and it’s a must on my Christmas goodies list every year.  But this time I sandwiched these adorable cookies with white chocolate ganache.  The luscious ganache builds up a happy taste with every bite and while the ones on diet will complain – I AM NOT.  Ha… ha…   If you want to experience another level of cookie goodness then this is a MUST-TRY this festive season.

Ingredients :

  • 2 cups (250 grams) all-purpose flour
  • 3 tbsp  (20gms) unsweetened cocoa powder
  • 1 teaspoon baking powder & ½ tsp baking soda
  • 1/4 teaspoon fine sea salt
  • 4 tablespoons (50 grams) unsalted butter
  • 1 tbsp oil (unflavoured)
  • 1/2 cup (100 grams) light-brown sugar
  • 1/2 cup (100 grams) granulated sugar
  • 2 large eggs, at room temperature
  • 1 tablespoon milk
  • 1 teaspoon vanilla extract

For the Filling :

  • 1 cup white chocolate
  • 4 tbsp.  cream
  • ¼ tsp vanilla essence

Method :

  • In a medium bowl, sift together the flour, cocoa, baking powder, baking soda, and salt.
  • Heat the butter on the stove top or in the microwave until melted. Add the brown sugar and white sugar to the hot butter and stir until combined. Add the oil and mix well.  Allow to cool to just warm before stirring in the eggs, one at a time. Stir in the milk and vanilla. Slowly mix in the flour mixture. Cover in plastic and refrigerate until firm enough to scoop without sticking, about 30 minutes or up to 1 day.
  • Preheat the oven to 180 deg C. Line two baking sheets with parchment paper.
  • Divide the dough into and shape into thick flat discs and lay on to prepared baking sheets.
  • Place on prepared baking sheets, spacing 2 inches apart. Bake for around 20 minutes, until cookies have baked. Cool for 5 minutes before removing to wire racks to cool completely.

To make the Filling:

  • Melt the chocolate and add the cream and vanilla essence to it, beat well till thick and fluffy.  Pipe the filling on to the baked cookie disc and sandwich them together.

Tips :

  1. The sandwich cookies need to be refrigerated because of the cream being used in the recipe.
  2. These cookies have a firmer texture if you want them softer, you can underbake them (bake for 15 mins instead of 20 mins)
