Quinoa & Spinach Patties

The Spinach Quinoa Patties are a healthy, fun and kid-friendly recipe, perfect for finger-food. These turns out to be a great option for healthy lunch ideas.  They will quickly become one of your favourite vegetarian meals.

You can eat them in many different ways. You can fill them into burger buns with your favourite sauce or dressing. Also you can toss them into a pita bread with pickled onions and cucumbers or simply arrange over a crunchy fresh salad.  So, the result of all the above options, will only be more nutrition in your diet without having to compromise on taste.  Cool isn’t it ?

 

 

You need only 6 to 7 ingredients to make these.   You may choose to add some cheese which is optional if you are on a dairy free diet.

 

 

 

I have shallow fried these and they turned out very crispy and delicious.  You can even bake them.  All you need to do is brush them with a generous amount of oil and bake alternatively on either side.  Depending on your oven it could take 10-15 mins each side.

QUINOA & SPINACH PATTIES

Ingredients :

  • 3 cups cooked quinoa – white or red
  • 1 cup of red & yellow bell peppers (finely chopped)
  • ½ cup grated zucchini
  • 1 cup spinach cooked and squeezed
  • 3 tbsp corn flour
  • 1 tsp red chilli powder
  • 2 green chillies chopped
  • 1 tsp ginger paste
  • 1 tsp chaat masala
  • Salt & pepper as per taste

Method :

  • In a mixing bowl add the cooked quinoa along with the veggies, spices and cornflour
  • Combine until it easily forms a dough.
  • Divide the dough in small balls and flatten with your palm to form small patties. (you can use a little water to help you to wet your palms)
  • Heat oil in a pan for shallow frying and fry these patties on each side till they turn golden brown and crisp.
  • For the last one minute you can increase the flame to give the patties a crisp exterior.
  • Take them out of the pan and sprinkle with some chaat masala.
  • These can be served with tomato sauce or a green chutney.

Handy tips :

  1. The heat of the gas needs to be on medium initially so that the patties cook thoroughly and not burn.
  2. You can increase the quantity of cornflour if the mixture is too moist, or feel free to add some breadcrumbs.
  3. You can add cheese in the patty mix for an added flavour (but then it is not vegan anymore)
