Cabbage Foogath
Cabbage Foogath is a very humble preparation.
It takes me back to my childhood, the days when I absolutely hated cabbage. My mom never forced me to eat it either. 🤗 She has a different approach to these tantrums and this I realized when I saw how wisely she dealt with my daughter’s food habits.
And honestly, that’s how I learned to cook smart. 😊
Cabbage Foogath is basically a stir-fry made with shredded cabbage to which just a few basic ingredients like onions, garlic, chillies, and freshly grated coconut are added. It is then cooked on slow flame till the cabbage softens and with the pan’s heat the coconut blends in with the dish.
Ofcourse, being a stir-fry you can keep the flame high and cook the faster version of this, which would take even lesser time. In this method the cabbage will retain it’s crunchy texture.
Both ways it tastes equally good.
The best part of Foogath is that it is low on spice and is cooked with minimum oil. Also, it cooks in a flash.
Hence, this is  quite a regular in most Goan homes. Amidst all the seafood and meat this always makes it to the dinner table as a side dish.
Cabbage Foogath
Ingredients :
- ½ kg  Cabbage, washed and thinly shredded
- 1 medium-sized onion chopped
- A pinch of turmeric
- 1 fresh green chilli chopped
- A pinch of Asafoetida
- 2 tsp oil
- 3 tbsp freshly grated coconut
- Salt, to taste
Method :
- Wash the cabbage thoroughly and cut it into fine shreds.
- Heat oil in a pan, add in the fresh chillies and saute.
- Then toss in the asafoetida, garlic and onions and further saute for a couple of minutes.
- Now, to this add the shredded cabbage and turmeric. Toss everything well.
- Season with salt let the cabbage cook for 5-6 minutes on slow flame with the lid on.
- Once the cabbage is done, add the grated coconut, mix well and switch off the heat.
- Serve hot with your Goan meal as a side dish.
Handy Tips :
- The cabbage is cooked till it softens and the grated fresh coconut blends in with it – But if you like the crunch you can reduce the cooking time.
- In some homes, they do add a pinch of sugar to this. So go ahead if you like the slightly sweetened version.
