Sitaphal i.e. custard apple is a creamy fruit which is used in various desserts like Basundi,
Ice-creams, kheers etc.
Well, this time we have taken the pulp of sitaphal and added it into the Rice Phirni. Phirni is a Kashmiri dessert. It is traditionally served chilled in clay containers. Although very few ingredients are needed, it scores very high on taste and presentation.
It’s a perfect summer treat and the flavours are to die for. The custard apple pulp adds to the flavours of the cardamom, saffron and rose water lending it a beautiful dimension.
SITAPHAL PHRINI
Ingredients :
- 1 cup soaked basmati rice
- 1 ltr full fat milk
- 3 custard-apples (only the pulp)
- 1/2 cup powdered sugar
- 1 tsp saffron threads
- 8 – 10 sliced almonds
- A few chopped pistachios
- 1 tsp green cardamom powder
- 1 tsp rose water
Method :
- To begin with soak the rice for two hours. Then, wash the rice and drain the excess water. Then make a rough, grainy paste by running the ingredients in a grinder.
- In the meantime, finely chop the almonds and pistachios and keep aside. Then take a saucepan, add milk and heat it on medium flame. Bring the milk to a boil. Then, add rice and allow it to cook on low flame, till the milk is reduced to half and the rice is completely cooked.
- Add sugar and cook for another 5-7 minutes. Keep stirring continuously or your phirni will stick to the bottom. Then add the custard-apple pulp and stir.
- Then add in the green cardamom powder, saffron threads, rose water and finely chopped nuts. Reserve a little for garnishing.
- Remove from fire. Mix well and pour in earthen cups. Garnish with nuts and allow the Phirni to chill before serving.
