The flavours of this MUSHROOM CHILLI CHEESE TOAST are extremely sophisticated.

The best part of making these recipes at home is that,  they look impressive and your family can savour these to their heart’s content.  We all know how much we end up paying for a fancy dish like this at  an high-end restaurant.   Also, the portion sizes are so measured.

I  do agree that eating out is all about the experience, the ambience, music etc.

But, in these times wouldn’t it be safer to eat at home,  and save yourself the stress of going out in a crowded place.

An easy to make filling and a delicious snacking option.  Make sure you have a good quality bread for this.

The cheese and fresh cream give it a melt-in-your-mouth rich flavour.  Green capsicum gives it a nice veggie crunch.  The mushrooms are cooked till soft and they combine beautifully with the cheese.

You can serve it as an appetizer or alongside your evening tea with friends.  They will love it !!

 

Mushroom Chilli Toast

Ingredients :

  • 8-10 slices of bread
  • 200 gm mushroom chopped
  • 1 onion finely chopped
  • 1 capsicum finely chopped
  • 5 garlic cloves finely chopped
  • 3 tbsp fresh cream
  • 1 tsp red chilli flakes
  • 2 tsp dill leaves
  • ½ tsp salt
  • 2 tsp olive oil
  • 2 tbsp cheddar cheese (grated)
  • 2 tbsp parmesan cheese (grated)

Method :

  • In a pan heat olive oil, saute the chopped garlic and red chilli flakes till slightly brown.
  • Add finely chopped onions and saute till transparent.
  • Then add chopped mushrooms and capsicum and toss for a couple of minutes.
  • Add the salt to the pan and mix well.
  • There should be no moisture in the mixture.
  • Now put the heat off and add fresh cream and incorporate it well.
  • Toast slices of bread on a pan with a little oil .
  • Next lay the toasted bread on a tray.
  • Layer the filling on top of the toasted bread.
  • Grate both the Cheddar and the Parmesan cheese over the filling and bake it in an preheated oven for 2-3 mins (on grill) till the cheese melts.
  • Drizzle the bread with a little olive oil.
  • Garnish dill leaves on top of the toast
  • Serve hot with a cup of tea or as an appetizer.

  • Will the cheese melt with only grating over the filling
    Dill leaves are fresh or dried

    • Hi Plassey ! Yes grated cheese will melt in a pre-heated oven on grill mode. Will take about 3-4 minutes depending on your oven. And yes the dill leaves are fresh. It lends an amazing flavour to the mushrooms.
