Cashew-nut Chocolate Laddoos

Ingredients:

  • 200 gms cashew nuts
  • 25g plant-based zero calorie sweetner (monkfruit or stevia)
  • Few drops of red color

For the filling :

  • 100 gms mawa / khoya  (I used homemade mawa /khoya)
  • 2 tbsp cocoa powder
  • 2 tbsp finely chopped cashewnuts
  • 1 tbsp desi ghee
  • 1 tbsp fresh cream

For outer coating :

  • 2 tbsp dessicated coconut


Method : 

Grind the cashew-nuts and zero calorie sweetner in the mixer to a fine powder.  Add few drops of red color to this and knead into a dough. Keep aside. This will be the pink layer of the laddoos.

For the filling :

  • Heat a pan on a slow flame, and add desi ghee, mawa and fresh cream.  Mix it well.  
  • Then add cocoa powder and finely chopped cashew-nuts and further mix it in.  To form a soft dough-like mixture.  Turn off the gas.  Remove this filling mixture in a plate to cool.  
  • Once cooled form small balls of this mix for the stuffing.

Then take a portion of the pink cashew-nut dough flatten it in your palms slightly cup it to fill the choco-nut filling inside.  Carefully shape into laddoos ensuring the stuffing inside is completely covered.  

Repeat and shape all the laddoos in the same way.  

Then roll these laddoos in desiccated coconut .  

They are ready to serve.
