Mandos (Goan Sweet)

Mandos (A Goan tea-time snack)

This is a traditional Goan sweet.  It is eggless, it is sugarless, contains fresh coconut, red rice and it is steamed.  What can be more healthy than this for a evening snack ?!

The ingredients used are very basic, also it is easy to prepare.

During those lazy weekends, when you are reading your favourite book, you can sip on your tea with this delectable sweet on the side.

Ingredients :

  • 100gms Red rice / Ukde tandul / par boiled rice
  • 1 small freshly grated coconut (100gms)
  • 80 gms coconut jaggery
  • 20gms sugarcane jaggery
  • ¼ cup broken cashew nuts
  • ½ tsp cardamom powder
  • ½ tsp ginger powder (optional)
  • Pinch of salt
  • ⅛ Teaspoon of ghee or butter
  • ½ cup water

Method :

  • Soak the rice for around 6 hrs or overnight.
  • Grate the coconut and both palm jaggery (coconut jaggery)  as well as sugarcane jaggery together in a mixer grinder.
  • Grind the grated jaggery, grated coconut, cardamom powder, ginger powder and salt with very little water.
  • Then in the same jar grind the rice with little water to make a thick paste.  (don’t add too much water)
  • Combine both the mixtures, add broken cashewnuts and mix well.
  • Grease a pan with butter and add the prepared mandos mixture. Add some cashewnuts and raisins on top if you like.  Cover it and put into a steaming vessel.  Steam for 40-45 minutes.  With the help of a toothpick check the centre of the mandos and see if it comes out clean to ensure it is cooked.
  • Then remove the pan and keep to cool.  Demould it while it is still a little warm to touch.
  • Cut the mandos into desired shape.  Serve with evening tea.

Points to remember

  1. Steaming time varies as per the quantity of mixture / flame size / pan size so its important to do a toothpick test.
  2. The palm jaggery gives the mandos it’s dark colour. You can adjust the palm and sugarcane jaggery proportion to change the colour.  Also sugarcane jaggery is sweeter so adjust accordingly.
  3. Ginger powder gives it a nice whiff, its totally optional. Skip it if you don’t like the taste of ginger.
